Ingredients

225g plain flour
225g wholemeal flour
340g caster sugar
2 tsp baking powder
1 tsp bicarbonate of soda
1/2 tsp salt
1/2 tsp ground cinnamon (optional)
1/2 cup butter or margarine (soft)
1/2 cup sour milk (if you don't have make it adding 1tsp vinegar to normal milk and wait to curdle)
1 cup smashed ripe bananas (3 or 4 depending on the size)
2 eggs

Handy Hint

I usually divide into 2 loaf tins but you can use any shape.

Method

Mix dry ingredients in a bowl and wet ingredients in a different bowl. Combine both. It is not necessary to mix too much, just combine. Butter and flour dust the cake tin before putting the mixture in.
Bake at 180C for about 40mins in a pre-heated oven.
Check if it is cooked in the middle with a cocktail stick, if it comes clean it is ready, if not bake for another few minutes.
Brew your favourite tea or coffee, sit back and enjoy!

My family devours it every time. It is very good to save up the bananas. It is very easy to make, smell and tastes delicious. Nobody can tell it is make with going back bananas and sour milk. Saving the pennies!
