Ingredients

225g of Butter
4 Eggs
450g of Sugar
Rind of 3 Lemons
Juice of 4 Lemons

Method

1) Put the butter and sugar in a saucepan,
2) Place on stove, and stir until clear.
3) Add 4 yolks and 2 whites of eggs, well beaten, juice and grated rind of lemons
4) Stir and cook till like honey.
5) Wash jars well and heat at a low temperature in oven
6) Then when mixture is cooked place curd in hot jars.

Mrs Bignell was my neighbour as a child. She gave this recipe to my mum. She also made me a soft toy 'Pandy' which I still have to this day.
