Spinach and tuna pasta from Patfrench

Ingredients

1 pack fresh spinach (200-250g)
150g cream cheese
1 can tuna (in brine)
Pasta
Parmesan cheese

Handy Hint

The tuna can be replaced by canned boneless salmon. The sauce is also nice with rice, baked potato - or by itself...It can be made in advance with tuna though not so great with salmon (takes a stronger taste)

Method

1. Put pasta to cook as usual.
2. Cook the washed spinach, when wilted, chop it a bit.
3. Then add tuna, flake it (on low heat).
4. Add the cream cheese and mix it till it makes a sauce.
My daughter loves Parmesan cheese so I add some to the sauce and mix it well - but could be without, or with cheddar.

I found this a great way to get my daughter to eat spinch - and it is a very complete dish. I am used to make this without looking exactly at proportions (for ex Philadelphia, can easily put more in fact), as long at it makes a thick creamy sauce it's fine.
