Ingredients

125ml vegetable oil
300g caster sugar
2 tsp vanilla extract
250g plain flour
40g cocoa powder
1 ½ tsp bicarbonate of soda
1 tsp salt
125g grated courgette
125g grated carrot
60g chopped walnuts

Method

1. Preheat oven to 180C/Gas 4.
2. Grease and flour a 22x33cm baking tin.
3. In a large bowl, mix together, oil, sugar and vanilla until well blended.
4. Combine flour, cocoa powder, bicarb and salt; stir into sugar mixture.
5. Fold in courgette, carrot and walnuts.
6. Spread evenly in prepared tin.
7. Bake for 25 to 30 minutes, until brownies spring back when gently touched.
8. Allow to cool before cutting into squares.

I thought this recipe would be a disaster as there seemed to be a lot of sugar and the mix was quite dry. (disclaimer i used muscavado sugar as this was all i had). But oh yum, these were the gooiest, yummiest brownies i have ever made. And they are vegan too. They are very rich though so probably not a good idea (in hindsight) to eat more than one!

I think it's better with beetroot but I'm a huge fan of getting veg into kids this way!

Well they look like brownies but they taste very, very odd. Great to use the veggies. Seem to have too many nuts in and while DS loves them DD declared they yucky and eschewed the entirely. Now have enough brownies to feed about 30 small children though. Will take them to the grandparents.

As I was making up this recipe the mix appeared peculiar, but it worked and my girls loved them! My DS didn't which is why I'll give an 8.

I love this recipe because it's a sneaky way of getting vegetables into your kid's diet!!
