Ingredients

150ml evaporated milk (about 1/2 large can)
110g butter
450g caster sugar
1/4 tsp ground cardamom (optional)

Handy Hint

9000 divided by oven wattage = time in minutes. eg 9000/750W = 12 minutes.

Method

1. Line an 8" square tin with baking parchment or tinfoil.
2. Put all ingredients (except any flavourings) in a large microwavable bowl. I use a pyrex mixing bowl.
3. Microwave on high for 9 minutes (for 1000W oven - see below for alternative wattage times) stirring every 2-3 minutes.
4. Remove from oven and beat with handheld electric whisk for 2 minutes. Beat in any flavourings at this point.
5. Pour into tin and leave until soft - mark into squares then leave until cold before cutting.

This is ^beyond^ good, and very, very simple to make. I added a bit of vanilla essence to mine for a nice 'plain' version. Fantastic for a last-minute present, contribution to a party, whatever. I took it camping and it went down a treat round the fire! I use the remaining milk in a jelly whip: there is just the right amount leftover from a large can to use up a tablet, and you can knock up both in less than half an hour if you're quick!

A great, quicker, cheaper, alternative to fudge recipes using cream or condensed milk. I add ground cardamom for a really lovely variation. You could also try a slug of Bailey's or similar.
