Ingredients

30 trifle sponge fingers
570ml (1 pint) double cream
450g fresh strawberries
Fruit juice (for sprinkling)
Icing sugar (for dusting)

Handy Hint

Great gateau in the summer when you can pick your own strawberries and get kids to do it. No cooking gateau. Made this with children and they totally enjoyed it.

Method

1. Whip the double cream.
2. Arrange 10 sponge fingers at the bottom of glass dish. Sprinkle a little juice over the sponges.
3. Spread cream and top it with strawberries, which can be cut into halves.
4. Put 10 fingers on top of this layer, and repeat this 3 times.
5. When finished dust it with icing sugar, leave it to stand in the fridge covered at least over - an hour at least, but longer is better.

Great recipe. Really easy to make and relatively low sugar.

I do a similar recipe,but instead of cream I use creme fraiche 1/2 mixed with sugar and half with sugar and cocoa powder. I dont sprinkle the sponges, but let it firm up over night. that way the sponges soften too. You could also use quark.
