Ingredients

450g peeled chestnuts (cooked)
1 large onion (peeled and chopped)
1 turkey liver (finely chopped)
25g butter
100g smoked streaky bacon (finely chopped)
1 tsp dried thyme
4 tbsp chopped parsley (or 2 tbsp dried)
¼ tsp dried mace
225g good-quality pork sausage meat

Method

1. Melt the butter in a large frying pan, and cook the onion, bacon and turkey liver for 10 minutes.
2. Put into a large mixing bowl and add the remaining ingredients. Season with salt and pepper and mix together well.
3. Put mixture in ovenproof dish.
4. Bake for 30-35 minutes in a fairly hot oven (180C/350F/Gas 4) until browned and crispy on top.
