Ingredients450g cranberries (fresh or frozen)1 large orange (peeled and juiced) 75g caster sugar 2-3 tbsp port or sherry 1 heaped tsp grated ginger (or 1/2 tsp ground ginger) 4cm of cinnamon sticks 4 whole cloves |

Method1. Chop the cranberries in a food processor and put in saucepan.2. Pare the zest of the orange rind and cut into fine shreds. Put these in pan with the juice, ginger, sugar and spices. 3. Bring up to a simmer, stir well, cover and let it simmer gently for about 5 minutes. 4. Remove pan from the heat, stir in the port or sherry and, when cooled, pour into serving dish. Keep in a cool place until needed. (Remove cloves and cinnamon before serving.) | |||||||||||||||||||||
