Ingredients400g pasta (penne or twists)1 ball mozzarella 250g fresh tomatoes 1 tbsp pesto 1 tbsp olive oil Handful fresh basil chopped (optional) |
Handy HintAdd chopped fried salami/bacon/ham or even chorizo for meat eaters. Great cold too as salad for picnic or BBQ. |

Method1. Cook pasta according to instructions.2. While it's cooking, chop the tomatoes and mozzarella into small chunks. Put into a large bowl with the basil (if using) oil and pesto and mix. 3. Drain the pasta and mix into the tomato/mozzarella mix. Serve immediately. | |||||||||||||||||||||
