Ingredients

1 chicken breast (optional)
1 red pepper (sliced)
4 spring onions (sliced)
4 closed cup mushrooms (sliced)
1 carrot (grated)
1 "nest" of dried egg noodles (around 300g)
A litre of stock or miso soup
2 tbsp of dark soy sauce
handful of chopped coriander

Handy Hint

You can add almost any veg to this. chopped lettuce (yes, lettuce) is good too.

Method

1. Heat a pint of veg/chicken stock or miso soup to simmering point.

2. Cut chicken (if using) into thin strips and add to stock.

3. Cook for 10-15 minutes.

4. Add vegetables and noodles and cook for further five minutes.

5. Just before serving, add 2 tablespoons of soy sauce and a handful of coriander.

Voila!

this is really tasty AND it's low fat. The noodles mena you won't have a big hunk of white bread and butter with it!
