Ingredients

1350g (3lb) tomatoes (can use up green tomatoes if necessary)
1350g (3lb) apples
450g (1lb) onions
340g (12oz) sultanas
450g (1lb) soft brown sugar
14g (1/2oz) mustard seed
1 tbsp ground ginger
1 tbsp mustard
1 tbsp pickling spice (in muslin bag)
3 pints cider vinegar

Handy Hint

Pour boiling water over pricked tomatoes in a bowl and leave to stand for a minute to get the skin off.

Method

1. Peel and chop tomatoes, onions and apples.
2. Add to the rest of the ingredients in a large pan and simmer for 2 hours.
3. Spoon into kilner-type jars straight from the dishwasher. Keeps for three months.
