Ingredients5 sprays of low-fat cooking spray3 cloves garlic (crushed) 1 large red onion, (finely chopped) 1 pinch salt, and freshly ground black pepper 800g canned tomatoes 1 stock cube, vegetable, made up to 150ml with hot water 350g pasta 4 large leaf basil (to garnish) |

Method1. Spray the low fat cooking spray in a large heavy-based saucepan and gently fry the garlic for 1 minute.2. Add the onion and some salt and pepper. Cook over a medium heat for 4-5 minutes, stirring often, until soft and golden. 3. Add the tomatoes and stock to the saucepan. Reduce the heat and simmer gently, uncovered, for about 40 minutes, stirring occasionally. Reducing the sauce concentrates it to give a rich, delicious flavour. 4. Check the seasoning, adding more salt and pepper, if needed. If you like, use a stick blender to partially blend the sauce. 5. Cook the pasta shapes for 8-10 minutes, or according to pack instructions. Drain well, then return to the saucepan and add the tomato sauce. Stir and re-heat gently for a few moments, then serve, garnished with basil leaves. | |||||||||||||||||||||
