Ingredients

250g butter biscuits (crumbled)
1 tsp vanilla essence
1/4 cup warm water
1/4 cup melted butter
225g cream cheese
1/2 cup white sugar
3/4 cup milk
3 sheets unflavoured gelatin
1/4 cup lemon juice
Zest of 1 lemon
1 cup double cream (whipped)

Handy Hint

Talk to an expert who knows how to make the gelatin work, as it's not easy.

Method

1. Mix biscuit crumbs and butter to bind them and then place mix in the bottom of a 9-inch spring tart tin and place in the fridge to chill for an hour or more.
2. Allow the gelatin to soften in warm water, and keep stirring until it melts well.
3. Blend the cream cheese and sugar, then add the vanilla essence, lemon juice, lemon rind, milk and gelatin. Mix well.
4. Chill this mixture in the fridge until it thickens then add the thickened cream.
5. Spread this mixture over the crust. Once again place this in the fridge to chill overnight. Top with strawberries or other berries to serve.
