Ingredients

2 cups mixed dried fruit
1 cup fruit tea (I like Blackcurrant or Lemon and Ginger-feel free to experiment)
1 cup sugar
8oz self-raising flour
1 egg (beaten)

Handy Hint

Vary the fruit tea to vary the flavour! It's delicious eaten warm with butter running through it - well it is a fat-free cake after all! Kids can help with every stage of this except the hot tea part.

Method

1. Place fruit in bowl, pour over hot tea.
2. Leave to soak, preferably overnight. The fruit will swell up.
3. Add remaining ingredients and mix well.
4. Pour into a greased loaf tin.
5. Bake in a preheated oven at 375F (Gas Mark 5) for 40-45 mins or until a skewer comes out dry.
