Ingredients2 cups mixed dried fruit1 cup fruit tea (I like Blackcurrant or Lemon and Ginger-feel free to experiment) 1 cup sugar 8oz self-raising flour 1 egg (beaten) |
Handy HintVary the fruit tea to vary the flavour! It's delicious eaten warm with butter running through it - well it is a fat-free cake after all! Kids can help with every stage of this except the hot tea part. |

Method1. Place fruit in bowl, pour over hot tea.2. Leave to soak, preferably overnight. The fruit will swell up. 3. Add remaining ingredients and mix well. 4. Pour into a greased loaf tin. 5. Bake in a preheated oven at 375F (Gas Mark 5) for 40-45 mins or until a skewer comes out dry. | |||||||||||||||||||||
