Ingredients

125g self-raising flour
125g unsalted butter (room temperature)
125g caster sugar
1 tsp baking powder
1 tsp vanilla essence
2 eggs
1 tbsp milk

Handy Hint

You need a blender/mixer

Method

1. Pre-heat oven to 180c and line a cup-cake tray with paper cases
2. Put all the ingredients (except the milk) in a blender
3. Blend until smooth, add the milk and spoon into cup-cake cases
4. Cook in oven for approximately 15 minutes.
5. Leave to cool then ice

Very easy and quick. To include in your cookbook I think I would suggest some variations. Eg, instead of vanilla essence, use the grated rind of one orange or one lemon; add 1/2 tsp ground cinnamon and put a slice of eating apple on top before baking; put a whole raspberry into the cake before baking etc. and maybe mention ideal proportion of liquid to icing sugar for making the icing.
