Ingredients

Broad beans (as many as you can be bothered to pick/pod)
Handful of fresh mint, tarragon, chervil and parsley
Few glugs extra virgin olive oil
1 capful white wine vinegar
2 spring onions (finely chopped)
Salt and pepper

Handy Hint

Delicious with sourdough bread and thin slices of pecorino cheese

Method

1. Pod (or double pod if big) your broad beans and boil for 5 minutes.
2. Drain and rinse in cold water to stop them cooking.
3. Chop herbs and mix with all other ingredients, then pour over broad beans and toss.

Fab - I have broad beans coming out of my ears. (the only thing we managed to grow in our new allotment!) Plus, my 3 year old loves de-podding the beans. Plus...DP is making wine out of the discarded bean pods....?!

Very easy and absolutely delicious. Adaptable too - my husband had saucisson sec chopped up with his and loved it.

This is great if you grow your own and have a glut. A fresh taste of early summer.
