Ingredients

175g plain flour
Pinch salt
30ml caster sugar
85g butter
1 egg
50ml jam

Handy Hint

Good with lemon curd too. Kids can make, easy peasy!

Method

1. To make pastry, sift flour, salt and sugar into a bowl, rub to crumbs, stir in egg and make a ball - chill for half an hour.
2. Preheat oven to 220C and grease tartlet tins. Roll our pastry and stamp out circles, press into the tins and spoon a heaped tsp of jam into each. 3. Bake for 15-20 minutes until golden brown.
