Method1. Line a roasting tin with a couple of layers of foil.2. Throw in a chicken breast or two per person (depending on how hungry you are). 3. In a bowl, mix mango chutney and coconut milk. 4. Chuck mix over chicken, pop in oven (220C for an electric oven)and cook until chicken cooked through - about 35 minutes - basting occasionally. | |||||||||||||||||||||
