Ingredients

100g digestive biscuits,
2 tbsp butter (melted)
1 1/2 cups cream cheese
½ cup condensed milk (adjust according to taste)
2 tbsp lemon juice
1 1/2 tbsp gelatine dissolved in warm water.

Method

1. Crush biscuits and butter together and lay in base of 6” pan. Refrigerate for an hour.
2. Beat cream cheese, condensed milk, lemon juice together. Stir in gelatine and pour filling over base.
3. Refrigerate for 4 hours, till set.

Extremely easy and delicious no-bake cheesecake; freeze it and serve in case of unexpected guests, or consume the whole thing in one go =) You can substitute the lemon juice with strawberry essence for strawberry cheesecake!
