Simple tomato soup from Anon

Ingredients

1 carrot
1 celery stick
1 red onion
Oil spray (healthy option) 1tbsp olive oil
3 cans of plum tomatoes
475 ml (1 pint) of veg stock
Splash balsamic vinegar
1 tsp sugar
Fresh basil (chopped)

Handy Hint

This is a good soup for people on a diet and is adapted from a slimming world recipe (which uses sweeteners instead of sugar and doesn't use any balsamic)

Method

1. Chop onion, carrot and celery and fry gently for 3-5 mins in a large pan.
2. Place rest of ingredients in to the pan, bring to the boil and then simmer for 15-20 mins.
3. Leave to cool slightly before blending until a smoother consistency can be seen (though not fully)

This is a lovely simple soup, add any extra herbs or spices to suit.
