Ingredients

200g plain flour
80g sugar
packet of vanilla sugar
pinch of salt
half tsp baking powder
1 egg
100g butter or marg
Jam to fill.

Handy Hint

You can use the same recipe to make Christmas cookies or Easter biscuits using the appropriate cookie cutter. Or let the DC decorate them with icing.

Method

1. Bung everything into food processor and whizz around. Or into a bowl and mix well.
2. Roll out to about 1/2 cm thickness then use cutters to make cookies of around 1.5cm diameter. Cut peepholes in half of the biscuits.
3. Bake in hot oven (200°C) for about 11 minutes.
4. Leave to cool then put the biscuits together with jam in the middle.

You can substitute vanilla essence for the vanilla sugar. Sorry, did not realise that it is not readily available in UK.
