Ingredients1 pint full-fat milk or milk and cream (of any sort, the fatter the cream, the richer the custard)4 eggs 1 rounded tbsp brown sugar 1/2 jar of mincemeat (use more if you wish) Vanilla extract 1 pack shortcrust pastry (you can make your own, but this is supposed to be quick and easy) |
Handy HintIf you use a metal dish, then put a baking tray in the oven to warm when you preheat, and place the dish on the hot tray. Otherwise, if you use a china dish, you will have to bake the pastry case blind before adding the filling. |

Method1. Heat oven to 170C.2. Beat eggs, sugar and vanilla well together. Add the milk (or milk-and-cream) and mix in well. Add the mincemeat and mix well. 3. Grease pie/flan/quiche dish and line with pastry. Pour mixture in. 4. Bake in centre of oven for about 45min or until the custard is firm and a skewer comes out clean. | |||||||||||||||||||||
