Ingredients

1 pint full-fat milk or milk and cream (of any sort, the fatter the cream, the richer the custard)
4 eggs
1 rounded tbsp brown sugar
1/2 jar of mincemeat (use more if you wish)
Vanilla extract
1 pack shortcrust pastry (you can make your own, but this is supposed to be quick and easy)

Handy Hint

If you use a metal dish, then put a baking tray in the oven to warm when you preheat, and place the dish on the hot tray. Otherwise, if you use a china dish, you will have to bake the pastry case blind before adding the filling.

Method

1. Heat oven to 170C.
2. Beat eggs, sugar and vanilla well together. Add the milk (or milk-and-cream) and mix in well. Add the mincemeat and mix well.
3. Grease pie/flan/quiche dish and line with pastry. Pour mixture in.
4. Bake in centre of oven for about 45min or until the custard is firm and a skewer comes out clean.
