Ingredients

1kg plums
300ml red wine
2 bay leaves
½ tsp ground cinnamon
2 cloves
1 star anise (optional)
Seeds from 4 cardamom pods or ¼ tsp ground cardamom
200g honey

Handy Hint

Serve with Barbados cream.

Method

1. Heat oven to 160C. You'll need a shallow baking dish that will fit the plums halved in one layer.
2. Halve plums, remove stones and lie in dish, cut side down.
3. Put all other ingredients in saucepan and bring to boil. Pour over plums, cover dish tightly with foil (or lid if it has one) and bake for one hour or till plums tender.

Once you have located the necessary spices, this is very easy to make and gets lots of compliments from the grown-ups (though in my house not from the smaller people).

I love this recipe to have a "smart" pudding at the ready in the freezer. I make it during the "glut" of plums & always take the spare when friends offer their surplus
