Ingredients1 onion1 large carrot 200g red lentils 235ml (1/2 pint) vegetable stock 2 cloves garlic (chopped) 2 tsp mild curry powder 1 tsp turmeric Fresh coriander to garnish |

Method1. Heat a little oil in a saucepan and fry off onions and garlic (2-3 mins)2. Add the carrot (diced). Stir for another couple of mins 3. Add the lentils, curry powdder and turmeric. Stir for 1 min 4. Cover with stock. Bring to the boil, then simmer gently for about 15mins, or until lentils have softened. Stir regularly to prevent sticking 5.
