Ingredients6 medium potatoes (unpeeled, sliced)
570g (1 1/4 lbs) 90% lean ground beef
455g (16oz) can kidney beans
425g (15oz) can diced tomatoes
1 medium onion (chopped)
1 clove garlic (minced)
2 tbsp flour
1/4 tsp salt
1/4 tsp black pepper
Method1. In a heavy skillet over medium-high heat, brown ground beef, rinse with hot water and drain.
2. Mix flour into diced tomatoes, stir until flour is smooth.
3. Layer into slow cooker in the following order: onion, beef, potatoes, garlic and beans.
4. Pour tomatoes over all and sprinkle with salt and pepper.
5. Cover and cook on low for 5 to 6 hours or until potatoes are tender.
