Lamb and couscous burgers from mollyroger

Ingredients

225g minced lamb
1 red onion (very finely sliced)
A dollop of tomato ketchup
Pinch of cayenne pepper (optional)
1 tbsp cooked couscous
1 tsp fresh mint (very finely chopped or generous pinch of dried mint)

Handy Hint

This is a really useful way of using up leftover couscous.

Method

1. Mix all ingredients together and season with salt and pepper.
2. Squish with clean hands until binding together and well mixed.
3. Squash into burger shapes.
4. Fry for 10 mins or until burger is cooked thoroughly all way through.

Same question about the couscous - 1 tablespoon of 'cooked' couscous doesn't sound like it would do much. Does it add any flavour, bulk it up, add texture or something else?

The recipe says 1tbsp of cooked couscous - is this definitely right? Doesn't sound like a whole lot (well it won't use up much leftover couscous that way, will it?). Or should it be 1tbsp of uncooked couscous so it absorbs some of the moisture in the other ingredients and expands? If anyone can advise, I'd be grateful - I'd like to make them.

Good fun for children to help make. My 2 don't like couscous but don't notice it in this recipe, enabling me to serve the rest of the couscous for me and dh with a nice, tangy homemade tomato sauce.
