Ingredients

50g self-raising flour
pinch cayenne
25g softened butter
80g finely grated red leicester
20g freshly grated parmesan

Handy Hint

Check the cheese straws after 8 minutes - some of my batches were definitely done by then.

Method

Preheat oven to 200C/gas mark 6.

Mix all ingredients together, either by hand or in a food processor. It might look crumbly but that's OK. Knead it all together.

Roll it out quite thinly on a floured board. Cut into short strips or stamp out into star shapes with a star-shaped cookie cutter and put on a non-stick, greased or lined tray in the oven for 10 minutes. Cool cheese straws on a wire rack.

Errrrm great recipe but for some strange reason its listed as dairy free!!!

We just made these very tasty cheese straws & was delighted with the results. I added 1/2 tsp colemans mustard powder an egg & a splash of milk, as these tips were on other recipes & it worked great. I also brushed the straws with alittle leftover beaten egg & sprinkled abit of parmesan on top - 'Delicious'... Thanks Nigella xx

Parmesan isn't vegetarian by the way! Most of it is made with animal rennet. However, I will be trying this an substituting for a vegetarian hard cheese.

they are going on my christmas buffet spread this year ... homemade tasty snacks ..my xmas guests/family will be impressed .. i used a pinch of paprika pepper instead of cayenne tasted lovely
