Ingredients

4 large Gammon steaks
2 tins chopped tomatoes
2 large carrots
2 large sweet potatoes
1 yellow and 1 red pepper
1 large red onion
1 teaspoon dried tarragon
1 tin cheap cider

Handy Hint

If your kids are reluctant veggie eaters, grate the carrot and sweet potato before adding. They'll never know they are eating them. Also, you can replace the cider with a stock cube dissolved in 500ml of boiling water.

Method

Clean and prepare veg. Slice onions,carrots and sweet potatoes and chop peppers. Put into slow cooker.
Cut any fat off gammon, chop into chunks. Add to pot.
Pour over tinned tomatoes, cider and tarragon.
Stir together. Add pepper if you want but no salt as the gammon is usually salty enough.

My kids love this served with giant baked potatoes, but it's just as good with rice or pasta. I always put some of it into a plastic tub and take it to my elderly in-laws-I have converted them to sweet potatoes! It's an economical and tasty dish that the whole family enjoys.
