Ingredients

Ingredients:
1 egg
100g butter or cooking margerine
150g plain flour
75g soft light brown sugar
50g ordinary white sugar
1/4 tsp salt
1/2 tsp bicarbonate of soda
150g chocolate chopped into chunks or a mixture of choc and raisins etc.
1/2 tsp vanilla essence

Handy Hint

You can vary the chocolate mix as long as you stick roughly to the same weight of 150g. White choc and dried cherries and cranberries is delish, choc and raisin etc.

Method

In a roomy bowl, soften butter in the microwave and beat in the sugars.

Add the beaten egg, salt, vanilla, bicarb and mix well.

Add the chopped chocolate and stir, then mix in the flour. The mix will be quite stiff.

Put dessert spoonfuls of mix onto a baking sheet, spacing them well apart as the cookie will spread.

Bake at about 180 for 10-12 mins.

These were delicious. I don't have a microwave so melted the butter in a bowl over simmering water in a pan and it worked fine. My dh's comment was - "You could sell these." I made 20 in 3 batches.
