Ingredients

Ready made puff pastry - ready rolled even better
large tub creme fraiche - half fat fine
handful grated parmesan
handful chopped basil
around 10 tomatoes
salt and pepper

Handy Hint

You can use mascarpone or cream cheese instead of the creme fraiche which makes the tart richer. I've also used creamy goats cheese which was lovely. If you cut the pastry into individual rounds is makes a posh looking starter.

Method

Pre-heat oven to 180 degrees.
Combine the creme fraiche, parmesan, basil and seasoning.
Spread thickly onto the puff pastry.
Slice the tomatoes and lay them over-lapping in lines on top of the creme fraiche mixture.
Put onto a baking sheet and put it into the oven for around 30 mins.
Serve with green salas
