Ingredients12oz frozen or fresh peas2 med potatoes, peeled 1/4 med onion 1/8 leek 1/2 stick celery 1tsp chopped fresh parsley 1pt vegetable stock Pinch of white pepper Pinch of salt optional |
Handy HintThe quicker you need the soup, the smaller the vegetables should to be cut. Add chopped mint instead of parsley for a refreshing change. If you like a creamier soup add 2 floz of whole milk at stage 3. (this will add a fat content) |

Method1.Roughly chop onions, leeks, celery and potatoes.2.Put into a saucepan with peas add stock, salt(optional), pepper and parsley and bring to boil. 3.Simmer until all are tender. Using hand blender or blender/liquidiser now process until smooth. Taste and add more seasoning or liquid if needed. Serve with homemade crusty bread. | |||||||||||||||||||||
