Ingredients

1 cup raisins
1 cup sultanas
1/2 cup dried cranberries
1/2 cup dried apricots, chopped
1 cup pecan nuts, chopped
1 cup of brown sugar
1/2 cup dessicated coconut
1/4 cup crystallised ginger, chopped
Zest and juice of a lime
Zest and juice of a clementine
1/2 a cupful of sloe gin
1 cup vegetarian suet
2 tsp ground cinnamon
2 tsp freshly ground nutmeg
2 apples, grated

Handy Hint

This is a really flexible recipe, you can substitute brandy or rum or any liquor really.

Method

Mix everything together in a big basin.

I have successfully used it at this stage and just store it in the fridge.

However St Delia leaves hers over night to allow the flavours to mingle, then she heats it gently in the oven to melt the suet and then she jars it in sterilised jars and stores it for months.

But it works well my (easier) way;).

This is light, versatile and simple alternative to the stodgy shop bought stuff. Well worth the effort and can be endlessly messed around with to suit your taste.
