MethodIn one saucepan, put olive oil and all the veg finely chopped except from tomatoes. some salt.
and cook slowly.
In another smaller saucepan. Add the tomatoes cut in pieces and some salt. cook until you get a juicy texture. Then add the tomatoes to the other veg...And let simmer until all vegs are soften!
