Ingredients

This come from the south of France...where I come from...It is dead easy and yummy!
3 spoon of olive oil.
1 to 2 onions
1 courgette
1 red or yellow pepper
5 medium tomatoes,
some salt

Method

In one saucepan, put olive oil and all the veg finely chopped except from tomatoes. some salt.
and cook slowly.

In another smaller saucepan. Add the tomatoes cut in pieces and some salt. cook until you get a juicy texture. Then add the tomatoes to the other veg...And let simmer until all vegs are soften!

That's it!!!

My toddler loves it mixed with basmati rice. Also yummy with chips instead of Ketchup! It is also a very low in calories so great & tasty for diets. Can be eaten warm or cold!
