Ingredients

225g/8oz SR flour
1 small pinch salt
55g/2oz butter/marg
150ml/3/4 pint milk
2oz of dried mixed fruit (or just sultanas)
1oz of sugar
Heaped tsp of ginger

Handy Hint

Savoury scones - add 85g / 3o\ finely grated hard cheese and 1 tsp dry mustard or 55g / 2oz chopped olives, anchovies or whatever you fancy and take OUT the sugar, dried fruit and ginger

Method

Mix flour, mixed fruit, sugar, ginger & salt. Rub in butter until breadcrumbs.

Mix in the milk. Form into soft dough with palette knife. Knead lightly on floured board then pat out into a round 2cm thick. Cut into 5cm rounds.

Put on greased baking tray, brush with milk, 220C/425F/Gas 7 for 10 mins.

The savoury scones (anchovy/olive) may sound horrible, but are actually really good.
