Ingredients300g cauliflower florets
50g cashew nuts chopped
1tsp cumin seeds
2tbsp fresh tyme
2 bananas (not ripe)
juice of a lemon
itbs olive oil
3 persimmon fruit cut into chunks
handful fresh chives
Handy HintLeave in fridge to marinate for 1hr and it is even better.
MethodBoil cauliflower until cooked but not soft.Then cool in cold water.
Roast nuts, thyme and cumin in a frying pan for 60 seconds until lightly brown.
Slice bananas, add lemon juice. Mix it all together with the olive oil.
Add the persimmon and chives.
Eat! Try with salmon fillet.
