Ingredients

2 lamb shanks
Couple of sprigs of rosemary
1 tin chopped tomatoes
Chicken stock cube
2 bay leaves
2 tbsp brown sugar
2 tbsp balsamic vinegar
3 or 4 carrots (diced)
2 onions (diced)
2 peppers (diced)
1 courgette (diced)
2 cloves of garlic (crushed)

Handy Hint

Add 1 tsp of cornflour to thicken the sauce if you need to - you will probably need to do this if you are using the slow cooker.

Method

1. Brown the lamb shanks in a little oil.
2. Put all ingredients in a big pan on the hob and cook gently for a couple of hours until the lamb practically melts.
3. Alternatively, this is a good one to shove in the slow cooker as well, and you can leave it as long as you like then.
4. Serve with mash or roast veggies.

Or just chuck all the ingredients in a pressure cooker ( brown the meat first and splash a bit of stock in and cook for about 20 mins to 1/2 an hour on high. ( chop the veg in bigger chunks for a pressure cooker) thicken gravy later with cornflour or potato starch ( or gravy granules!) lovely!
