Ingredients

2 cups caster sugar
3 cups self raising flour
Half tsp salt
1 cup veg/sunflower oil
1 cup orange juice
1 tsp vanilla essence
4 eggs

Handy Hint

this is the BEST cake for birthday cakes, it rises high and is tasty and moist and is really easy to make.

Method

Add together all dry ingredients.

Add all other ingredients.

Mix well.

Pour into large (casserole dish sized) cake tin, or 2 round ones
bake at 325F for 50 mins if larger tin, or about 35 mins if 2 smaller tins.

I've made this twice now. It makes a great birthday cake. Cooking time is nearer to 90 minutes though.

This cake is fab! Everyone I've given it to has commented on the delicious flavour and the fact that it's very moist. It can be cut into any shape for birthday cakes - it rises quite high so no need to make 2 cakes and sandwich them together. This cake is very forgiving if your hand slips when measuring any ingredients (not that that would ever happen, especially if you have little helpers...).
