Ingredients

75g/3oz white chocolate
1 tbsp single cream
3 egg yolks
50g/2oz caster sugar
210 ml/7 fl oz double cream

Handy Hint

you can add anything you fancy to basic mix... or try different chocolate, G&B butterscotch is scrummy.

Method

1. Melt the chocolate in the microwave or over a pan of simmering water, add the single cream when you take it off the heat.
2. Whisk the egg yolks with the sugar until thick and creamy, best done with an electric whisk to get them really thick and creamy.
3. Fold in the white chocolate followed by the double cream.
4. Pour/spoon mixture into the ice lolly moulds... or wee individual freezer proof dishes and freeze.
