Ingredients

1 small onion, chopped
1 tin baked beans
Handful of frozen tofu hot dogs
1/2 green pepper, chopped
1 large tomato, chopped

Handy Hint

Red or yellow peppers can work but are a little too sweet for my taste.

Method

One from student days (also works well on a comfort food level)...

Fry onion until translucent.
Pile in rest of ingredients.
Stir and put on lid so steam can escape.
Simmer for 20 mins.

Pour into a large bowl and eat with some lovely buttered bread.

That's it!

Instead of Tofu hot dogs you can use Quorn/Soya ones, now sold in most supermarkets, some even do their own cheaper version now as well. Holland and Barrett is also a good bet.

I know it sounds a little 'unskilled' but after years of trying the cordon bleu approach to cooking it's great to revisit some of the oldies!
