Ingredients

1/2 cup sugar
1 cup buckwheat flour
1 tsp baking powder
Enough milk to make a thick batter texture (can use soy milk if dairy allergy)
1 grated banana

Handy Hint

Will keep overnight and can be warmed up in toaster or grill. great with greek yoghurt and berries

Method

Combine dry ingredients.

Add banana, pour in milk and stir until thick batter.

Cook in a crepe/heavy non-stick frying pan on low/medium until bubbles start to form.

Flip, cook til lightly browned both sides.
