Ingredients

170g/6oz sr flour
pinch salt
2 tbsp cocoa powder
170g/6oz caster sugar
5 tbsp sunflower oil
230ml/8fl oz sweetened soya milk
1 tsp vanilla extract

Handy Hint

I altered recipe slightly and only added 2 tbsp oil but then added 50g of melted dark (dairy free) chocolate. The result was good. I also only had a 7" square tin but just added 5 mins to cooking time which was fine.

Method

Preheat oven 180c/160 fan/Gas 4.

Grease 20cm/8in square tin.

Sift together flour, cocoa, salt, sugar.

Add oil, soya milk and vanilla extract and mix together until completely mixed.

Pour into tin and bake for approx 25 mins.

Leave to cool for 5 mins in tin and transfer to wire rack.

Ds is egg allergic but not dairy so I replaced 5 tbs of sunflower for a combo of 3tbs melted butter and 2tbs of sunflower oil. I also swapped soya milk for cows milk and aadded a small bag of choc buttons to the mix. A winner all round Ty x

Lovely. My littlest DC cried when they were all finished! I only had unsweetened soya milk so I used a bit less than 8oz and added a big splurge of dairy-free chocolate ice cream topping. Am making them again today.

Another tip - I made this again at weekend for dd's birthday and added a mashed up banana at the end and it was alot more moist. Lovely. Also, for a dairy free topping, melt 100g dark (dairy free) chocolate and mix in approx 3 tbsn golden syrup. Allow to cool slightly then smear over top and allow to set.

Not as gooey as proper brownies, but what do you expect with no eggs & butter! Still lovely and moist.
