Ingredients200g flour100g vegetable fat (e.g. Cookeen) Pinch salt 3 tbs cold water Approx 7 portions of frozen spinach (the sort that comes in chunks) 200g cottage cheese 4 tblspns soured cream 1 egg Fresh nutmeg Pepper Cheddar cheese to sprinkle over the top |

MethodPre-heat the oven to 180cRub the fat into the flour and salt (I do this in a food processor) Add the water and combine until it forms a ball (also in the food processor) Roll it out and put it in a quiche dish (quite a big one) Bake it blind for 10 mins In the mean time,cook the spinach for about 7 mins in a 850 watt microwave. Stir the cottage cheese, soured cream and egg together and season with nutmeg and pepper. When pastry is ready, arrange the well drained spinach over the base, then pour the cheesey/eggy mixture over it. Smoosh it around so it looks even. Grate cheddar cheese over the top.
