Ingredients400g-500g stewing beef (cubed)800 - 850ml stock (beef or vegetable) 3 large carrots (peeled and chopped) 1 onion (diced) 1 red pepper (cut into chunks) 1 green pepper (cut in chunks) Potatoes (cubed) 1-2 cloves garlic (peeled and sliced) Salt and pepper seasoning For the dumplings: 100g plain flour 1/2 tsp baking powder 50g suet A pinch of salt 4-5 tablespoons cold water |
Handy HintUse hands to mix dumplings. Don't worry about sealing the meat first. |

MethodFor the beef casserole1. Set your slow cooker to high. 2. Add 500ml or so of your stock. 4. Put the potatoes in first, followed by all other veg. 5. Cut the beef into cubes and place in last. 6. Top up with stock until just covering meat. For the dumplings: 1. Mix together suet, flour, baking powder and salt. 2. Add 4-5 tablespoons of cold water and mix until soft and slightly sticky. 3. Roll into balls about size of walnuts. 4. Add to slow cooker about 45 minutes before the end. | |||||||||||||||||||||
