Ingredients

4oz rolled oats
5oz plain flour
4oz butter/margarine
3oz sugar
3-4 tbsp jam/pie filling.

Handy Hint

Eat with cream, custard or cold cut into slices as a type of flapjack.

Method

Mix all ingredients together to the 'breadcrumb' stage (It should look a bit like a crumble mix).

Press 2/3 into a dish, approx 8 inch x 6 inch (I use a small metal baking dish).

Dot with jam/pie filling and cover with the extra mix.

Cook for approx 20-30 mins at 180C until golden brown.

I devised this recipe for my dh who has high-cholesterol, and oats are helpful, as wll as delicious. This is a super-easy recipe I use all the time - it can be poshed-up for sunday-dinner, or served cold for tea/snacks.
