Ingredients

2 cups plain flour
3 eggs
1 cup milk
1.5 tsp baking powder
1 tbsp sugar
1 tsp salt
125g melted butter
Veg oil for cooking

Handy Hint

Not just good on Pancake Day: great for weekend breakfasts, with maple syrup, fried eggs and a couple of slices of bacon or some sausages.

Method

1. Mix ingredients together thoroughly into a batter. It may appear lumpy but that's fine.
2. Put a tbsp of veg oil into a skillet which is on hob over medium heat. Using a large ice-cream scoop or ladle, drop a scoop of batter onto the skillet.
3. When loads of bubbles are on top of pancake, flip it over.
4. Cook for about two more minutes and then remove. Only flip pancakes once, as doing it more often will harden them.
5. Enjoy.

These are thick and yummy pancakes. If you're after the thin lacy variety, add some water until you get a slightly thicker than single cream consistency!

Just made these for pancake day(out tomorrow so have had them in advance!) they were yummy! I didn't have any baking powder so missed that out by they still tasted good. Thanks

1 cup milk = 236ml 1 cup flour = 125g (ergo 2 cups 250g)

Don't want to appear dim, but how much is a cup as I'm still a few centuries behind and use ounces?

Easily made into gluten free by using Dove's Farm Gluten Free flour and a gluten free baking powder.
