Ingredients

1 large onion
Several carrots / other root veggies
1.2k diced braising steak
3/4 bottle red wine
300-500mls stock
2 tblspns tomato puree

Handy Hint

you can use lots of veg.in this recipe - carrots, parsnips, squash all work well (or a combination!)

Method

Heat a dash of olive oil in a large casserole on the hob.

Fry the roughly chopped onion until it is soft but not golden and remove from the pan.

Dip the bits of steak in some seasoned flour and brown in the casserole.

Put the onion back in, add the wine, chopped up carrots, puree and enough stock to cover everything.

Bring to the boil on the hob then cover and put in the oven for as long as possible (4ish hours is ideal) on a low heat - the longer you have to cook the lower the oven can be and the more tender the meat and veggies will be.

(The alcohol will be cooked off during the lengthy cooking process making it suitable for the whole family)

Serve with potatoes, rice, buttered pasta or couscous.

Just cooking this now! had a quick taster (we'll be eating it in about 30 mins) and i have to say it tastes quite strongly of wine. Not sure if it's because i used a cheap bottle or if it's meant to be quite strong in flavour. Very nice but very strong in the wine department lol. :)

i started making this recipe when i was given loads of red wine that even i couldnt drink! although some people argue that you should never cook with cheap wine, this makes a lovely dinner. it takes minutes to get going and you can leave it on all afternoon, filling the house with lovely smells! my toddler absolutely loves it and devours all the veg every time! it makes a quick meal for the next day and you can put in whatever veggies you have on the go!
