MethodHeat a dash of olive oil in a large casserole on the hob.Fry the roughly chopped onion until it is soft but not golden and remove from the pan. Dip the bits of steak in some seasoned flour and brown in the casserole. Put the onion back in, add the wine, chopped up carrots, puree and enough stock to cover everything. Bring to the boil on the hob then cover and put in the oven for as long as possible (4ish hours is ideal) on a low heat - the longer you have to cook the lower the oven can be and the more tender the meat and veggies will be. (The alcohol will be cooked off during the lengthy cooking process making it suitable for the whole family) Serve with potatoes, rice, buttered pasta or couscous. | |||||||||||||||||||||
