Ingredients1 bunch of fresh beetroot
1 packet feta cheese
1 packet walnuts
White wine vinegar
Extra-virgin olive oil
Freshly cracked black pepper
Method1. Boil the beetroot for an hour or so until they are soft. Keep an eye on them, as it's easy to let them boil dry.
2. While they're cooking, wash and chop the endive and cut the feta into cubes.
3. When beetroot are cooked, peel and chop roughly, then mix all ingredients together.
4. Add vinegar, olive oil, salt and pepper to taste- I think a bit more vinegar than oil works here.
