Ingredientschicken (any shape / size raw or leftovers!)rice (any sort really) dried green lentils (optional) cumin onion (sliced) garlic (crushed) oil |

MethodCook the chicken (e.g. grill) if not already cooked.If using lentils rinse in cold water then cover with cold water in pan and bring to boil and simmer for 15mins then add rice and cover and simmer until all water absorbed. If not using lentils just cook rice as normal. Fry the onion in the oil until slightly crispy and caramelised and add garlic to soften. Tip in some cumin (as much as you like really) and coat the onions, then add the cooked chicken to pan and coat chicken in cumin-y onions. Serve a big heap of rice (and lentils) with the delcious chicken and onions on top. | |||||||||||||||||||||
