Ingredients

180g self-raising flour
1/4 tsp salt
1 tsp baking powder
12 tbsp unsweetened cocoa
250g butter
4 eggs (beaten)
400g sugar
2 tsp vanilla essence

Handy Hint

The brownies should appear dry on top and be almost firm to the touch. Although they will remain moist inside.

Method

1. Pre-heat the oven to 180C.
2. Sift together the flour, salt, baking powder and cocoa.
3. Melt the butter over a low heat. Beat together the eggs, sugar and vanilla essence.
4. Add the butter to the egg and sugar mix. Then add flour and mix well.
5. Spread into greased rectangular baking tray (9x13") and bake for about 30 minutes.

I found these so quick and easy to make, really delicious, especially as I added choc chunks to the top when they had just come out of the oven!

Hmmm.. not sure about these. Made a nice chocolate traybake cake but didn't have the chewy texure that a brownie should have. Won't be making them again

Excellent - easy to make, lovely rich choc flavour from the cocoa powder and fab texture. Used a slightly smaller tin - just lined it with grease-proof paper leaving a few cms above the edge, no problems. A real winner!

these brownies are adaptable as dairy free. Just replace the butter with Pure or any other non dairy margarine.

Really easy and worked well, even though my baking tray was a bit smaller than specified. I got tall Brownies.
