Ingredients8 slices smoked salmon (preferably not farmed)1 lemon, juiced A good grind of black pepper 8 slices of mature Irish cheddar 1 loaf wheaten bread or brown soda bread Guinness (to serve) |

Method1. Pour lemon juice over smoked salmon slices, and grind over black pepper.2. Meanwhile, lightly toast some slices of wheaten bread. 3. Place a slice of smoked salmon on each piece of toasted bread. 4. Cover salmon with slices of cheddar. 5. Place under a hot grill until cheese has melted and bubbling and exposed edges of bread are slightly charring. 6. Serve with Guinness to drink. | |||||||||||||||||||||
