Ingredients

8 slices smoked salmon (preferably not farmed)
1 lemon, juiced
A good grind of black pepper
8 slices of mature Irish cheddar
1 loaf wheaten bread or brown soda bread
Guinness (to serve)

Handy Hint

You can also drink the Guinness during the preparation.

Method

1. Pour lemon juice over smoked salmon slices, and grind over black pepper.
2. Meanwhile, lightly toast some slices of wheaten bread.
3. Place a slice of smoked salmon on each piece of toasted bread.
4. Cover salmon with slices of cheddar.
5. Place under a hot grill until cheese has melted and bubbling and exposed edges of bread are slightly charring.
6. Serve with Guinness to drink.

use as a light lunch, snack or starter any time of year. I only gave it a 5 for 'Success with Children' beacuse of the Guinness - otherwise our 6 year old loves it. What are we doing to them - we never had smoked salmon when I was 6!
